Vegan African food from Ethiopia (recipes)

Who knew Ethiopia, one of the oldest cultures in the world, had such great food? It's a Christian country, perhaps the original Christian land when "Ethiopia" may have referred to all of Northern Africa (Kemet) or at least all the biblical lands.

Ethiopia is so Christian, Coptic (Egyptian), that it takes its Lent super seriously. The whole country fasts for 40 days! Fortunately, in Ethiopian Christianity eating pure vegetarian food is included in the definition of "fasting."

"Meat is murder," (ask The Smiths) and one avoids murder during Lent. It used to be the same way in Catholicism, going heavy on fish as if they were a vegetables. No red meat was eaten. But the Vatican just wants followers, so they dismantle all the guidelines to appease popular opinion and further distance us from any serious spirituality. Here are three vegan (no animal products at all) recipes.

Ethiopian cuisine is bread-based, but "bread" as the original staff of life is made of lovegrass teff (the tiniest grain) and is called injera. It's probably what Issa (Rabbi Jesus Christ) was eating in and around Gethsemane, a garden where he meditated and prayed, when he, his wife (Mary Magdalene), and other apostles (see the Gnostic Gospels for the story of the apostles that includes the Gospel of Mary) had a Seder meal (last supper).
