Homemade vegan blueberry pie (video)

The Conscious Plant Kitchen has a vegan blueberry pie recipe that is the most delicious and comforting dessert for any occasion.

It's a flaky, buttery, vegan crust filled with sweet, sticky blueberries in lemon juice and cinnamon. Bonus, it can also be made gluten-free using my vegan, gluten-free pie crust.

It’s time for sweet pie, which is good all year around not just during the cold when the oven helps warm the house. A dessert table is incomplete until it meets gorgeous blueberry pie. Let's give it a vegan twist and find a recipe for a plant-based blueberry pie.

Old-timey blueberry pie was not vegan because the crust contained butter. It can go modern and vegan and gluten-free (in keeping with Dr. Wallach's advice to avoid all gluten from wheat, barley, rye, and ALL oats -- particularly the kind that advertise as being "gluten-free" -- have a kind of gluten or harmful plant lectin Dr. Gundry warns about called avenalin like wheat's gliadin).

It takes time to make pie, and that’s what we don't have.

So if we make vegan blueberry bars, we can swap them into this pie. There’s nothing more beautiful and heart-warming than sweet blueberry pie.


(Make It Dairy Free) This vegan blueberry pie recipe is perfect for summer. It's completely homemade from scratch, just like grandma's. Only ten ingredients are needed. It is dairy free, vegan, egg free, gluten free (when using a gluten free flour blend) and can be made a Top 8 Allergy Friendly pie.

MAKING CRUST
Prep well, and it'll be easy to do.
To make a pie, we need a crust. Use one of each recipe below:
  • Vegan pie crust – recipe uses a gluten-free flour blend. The crust uses vegan butter. Recipe for a coconut oil version. 
  • Vegan gluten-free pie crust – this one doesn’t lattice as well, so use classic vegan pie crust for lattice pies
BLUEBERRY FILLING
For the insides we need:
  • Fresh or thawed frozen blueberries
  • Lemon juice
  • Cinnamon
  • Cornstarch or corn flour
  • Coconut sugar (nectar) – or any granulated sugar like brown sugar or erythritol for a sugar-free pie.
