I am beyond excited to share the vegan recipe for this Mexican Buddha Bowl today!
It is one of my favorite meals, like, literally. I eat it at least once a week (or more), and I still love it – so you know it must be good. This vegan meal is a healthy and delicious combo of seasoned potatoes, rice, beans, and greens. It's gluten free, too. The gist of a “Buddha Bowl” is grains, beans, greens, savory veggies, and sauce.
