This vegan blueberry pie recipe is perfect for summer. It's completely homemade from scratch, just like grandma's. Only ten ingredients are needed. It is dairy free, vegan, egg free, gluten free (when using a gluten free flour blend) and can be made a Top 8 Allergy Friendly pie.
MAKING CRUST
- Vegan pie crust – recipe uses a gluten-free flour blend. The crust uses vegan butter. Recipe for a coconut oil version.
- Vegan gluten-free pie crust – this one doesn’t lattice as well, so use classic vegan pie crust for lattice pies
For the insides we need:
- Fresh or thawed frozen blueberries
- Lemon juice
- Cinnamon
- Cornstarch or corn flour
- Coconut sugar (nectar) – or any granulated sugar like brown sugar or erythritol for a sugar-free pie.
