How to make Irish sourdough bread (video)

But I love gluten. It makes bread addictive.
Bake bread. It's delicious and relatively easy, so long as you get it to rise before baking. Otherwise it'll become an inedible lump of glue (toxic gluten). Rising takes time, like overnight in a warm kitchen. Most important of all: NO WHEAT (white flour, whole wheat, durum semolina, tritacle, kamut, spelt), NO RYE, NO OATS, and NO BARLEY.

All of these grains cause grain damage because they are full of a plant toxin grasses manufacture as a protein poison so avoid being eaten: gluten. By the way, there's no such thing as "gluten-free oats" even though that's what the packet says. Why? Oats have their own form of toxic gluten called avenin like wheat's gliadin. It is still gluten. ("Gluten-free oats" simply means oats not cross contaminated with wheat gluten but full of their own toxic gluten).

There are many ways to go in Ireland.
There are plenty of great flours to use: brown RICE (or glutinous rice for more wheat-like quality without the harm of harmful gluten), SORGHUM, QUINOA, TEFF, MILLET, AMARANTH, as well as gluten-free and oat-free mixes of assorted legumes and starches like potato, tapioca, cassava (probably the easiest choice if they can be found on the shelves).
