Tofu's boring, like meat, which makes it versatile
Tofu, recently highlighted by the Netflix cooking survival show "Culinary Class Wars," holds a special place in the hearts of Koreans for its humble yet versatile appeal.
Tofu, or dubu in Korean, is created by soaking soybeans, blending them into a puree, coagulating the mixture, and pressing the curds into solid white blocks of varying softness.
There are 1,001 vegan foods to make out of it.
A long-standing staple in Korean cuisine, tofu serves not only as a rich source of plant protein but also embodies the simplicity and balance that are integral to Korean culinary heritage.
The role of tofu in Korea's culinary history is closely linked to Buddhism and Buddhist temple cuisine, where vegetarian diets were central. Meat (made from often tortured and always murdered animals) is heavy bad karma. Tofu, which rich in protein and harmless (depending on cultivation practices), became an essential part of temple meals. This connection is not unique to Korea. Japan and China also cultivated rich tofu cultures through their Buddhist traditions.
Tofu's significance in Korean cuisine was recently spotlighted in the semifinals of the hit culinary show, where the seven remaining contestants were tasked with continuously creating inventive tofu dishes until they faced elimination.

275 g tree oyster mushrooms
olive, coconut, or other vegetable oil for frying
WET batter:
1 cup of gluten-free flour (115 g)
1 tsp onion powder
1 tsp garlic powder
1 tsp of salt
1 cup of almond milk (250 ml)
1 tbsp maple syrup
DRY batter:
1 cup of gluten-free flour (115 g)
1 tsp of paprika
1/4 tsp ground sage
1/4 tsp cayenne pepper
1/2 tsp dried thyme
Pepper to taste
In a deep fryer or in a pot on the stovetop, preheat the oil to 350˚F.
First, make the wet batter by adding gluten-free flour, seasonings, and water to a bowl, and mix well until completely combined.
Next, in a separate bowl, make the dry batter by adding more gluten-free flour and seasonings to a bowl, and mix well until seasonings are fully incorporated into the flour.
Dip mushrooms in wet batter then coat them in dry batter.
Immediately add them to a hot oiled pan or deep fryer, making sure not to over crowd them.
Fry for 3 minutes.

Tempeh Vegan Ribs
1/4 cup ketchup (60 ml)
1/4 cup Bragg's Aminos (60 ml)
1/4 cup maple syrup (60 ml)
1/4 tsp crushed red pepper
1 tsp onion powder
2 tsp liquid smoke
1/2 cup vegetable broth (125 ml)
250 g tempeh
In a skillet or a small saucepan, combine ketchup, Bragg's Aminos, maple syrup, crushed red pepper, onion powder, liquid smoke, and vegetable broth.
Bring to a boil and add the tempeh.
Reduce the heat and let it simmer until the sauce has thickened turning the tempeh once halfway through cooking.
Remove the tempeh from the sauce, baste with the rest of the sauce, and serve in a bun, with a salad, or sweet potato fries.

There were ~100 of us to one side of the main festivities, in the human Tunnel of Love: We were smudged with white sage and passed through a love gauntlet with eyes closed and hands out as each person leaned in and whispered inspired positive messages. It was intense. Some cried, some repeated "thank you," others went through again. Thanks, Dave!

Okay, the food was great, the lines long but manageable, the people odd, then everyone ate, got massages, did meet and greets with old friends and new. Then came the best part, even better than the overflowing dessert table. Dave Rubin invited everyone to join in a love experiment. We were curious. We ran over and were arranged in two rows facing each other. The burning sage cleansed ("smudged") us in the Native American tradition of the local Kizh/Tongva, Chumash, and Tataviam (Spanish Gabrieleno, Ventureno, and Fernandeno) tribes. Volunteers went to the first opening in the human tunnel, were smudged again and given instructions to close their eyes, walk slowly, and listen. Then people in the lines that formed the wall of the human tunnel showered them with love one by one. It was amazing, a tingly experience, like the most love (metta) you ever got from strangers. It was awesome!

Calm down. Those in the know are aware that "seitan" is just a misleading Japanese name for "wheat meat."

many American Indian tribes are returning to their roots with community
and home gardens, cooking classes that incorporate traditional foods,
and running programs to encourage healthy eating lifestyles [returning back to the Earth].
The
latest effort on the Navajo Nation, the country's largest "reservation" [modern internment camp],
is to use the tax system to spur people to ditch junk food.
A
proposed 2 percent sales tax on chips, cookies, and sodas failed Tuesday
in a Tribal Council vote.
But the measure still has widespread support,
and advocates plan to revive it, with the hope of making the tribe one
of the first governments to enact a junk-food tax.
Elected
officials across the U.S. have taken aim at sugary drinks with proposed
bans, size limits, tax hikes, and warning labels, though their efforts
have not gained widespread traction. In Mexico, lawmakers approved a
junk food tax and a tax on soft drinks last year as part of that
government's campaign to fight obesity.
Navajo President Ben
Shelly earlier this year vetoed measures to establish a junk-food tax
and eliminate the tax on fresh fruit and vegetables. At Tuesday's
meeting, tribal lawmakers overturned the veto on the tax cut, but a vote
to secure the junk-food tax fell short. Lawmakers voted 13-7 in favor
of it, but the tax needed 16 votes to pass. More
